Ah, fresh grapes! A little tart, a little sweet, and… well… little! Whether these teeny fruits are fresh off the vine or perfectly aged in my ideal glass of wine, there’s no bad way to eat a grape! Further evidence of this are the delicious treats we have in store for you today! An elegant dessert and a sweet summer cocktail are all you’ll need to kick off June with a happy palate!

Grape Macaroons
Almond/Honey Ice Cream, White Chocolate Cream

I can’t think of any better way to introduce you to our Pastry Chef Extraordinare, Jamie Crone, than by presenting these perfectly made macaroons. Served with white chocolate cream and honey/almond ice cream, these little desserts have taken me to a higher place. If you’ve never had the pleasure of the perfect macaroon, let me break it down for you.

Macaroons are mini meringue-like cookies. They’re traditionally made by whipping the egg whites and sugar until they form stiff peaks, then gently folding in almond flour. To incorporate the grapes, Crone cooked them down into a syrup, then added the syrup to the macaroon batter. Bake them up, and you’ll have beautiful little cookies!

To make the Almond/Honey Ice Cream, Crone simply replaced the sugar with honey and steeped almonds in the cream as she heated it. She then tempered the egg yolks into the cream, let the mixture cool, and poured it into the ice cream machine.

Once all of that is done, you’ve got these perfect little macaroon ice cream sandwiches that are beyond stellar. The tartness of the grape really shines through, and the sweetness of the almond is a perfect balance. These are one farm fresh pick that I’d highly recommend you get down here and try asap!

Grape Cooler

Concord Grape Juice
Hendricks Gin
St. Germain
Fresh Lime Juice
Ginger Ale

Instructions: Add Gin, St. Germain, and lime to shaker. Fill with ice and shake. Strain into glass of ice, top with grape juice and ginger ale. Garnish with grapes and lime wedge.

This drink tastes just as sweet as it looks, and it totally screams, “Summer”! Between the gorgeous color of the grape juice and the sweet flavors of St. Germain, this is one easy sipper. Beverage manager, Marc Canzoneri says, “I wanted to have a simple drink that played on both the sweet and tart flavors of the grape.”

St. Germain is an elderflower flavored liqueur with notes of tropical fruits, citrus, and floral overtones. The flavor is subtle and sweet, which lends itself well to this concoction. The lime juice balances out the sweetness, and the ginger ale is a great way to round this one out.
