Champagne Cocktails & Other Sparkling Delights

If there’s one thing that’s for certain, no New Year’s Eve is complete without someone popping a bottle of Champagne. Whether you’re watching a master sommelier sabre a bottle of Dom Perignon in a world class restaurant or watching your great Uncle Fred clumsily spray the bubbly all over your living room, it’s the one tradition we can all seem to agree on. When there’s a new year coming, there must be sparkling beverages present.

Which is why our beverage manager, Marc Canzoneri, took some time out this morning to show me how to craft the perfect champagne cocktail, and pulled out a few bottles that are great for ringing in the new year.

The Champagne Cocktail is a classic, dating back to the 1860′s. It is simply crafted using three ingredients and an elegant garnish. To start, you’ll need a brown sugar cube, Angostura bitters, and champagne. Simply place the sugar cube into the bottom of the glass, and cover with 3-5 dashes of Angostura bitters. Top with champagne, and garnish with a lemon curl. Voila! Class in a glass.

For those of you who prefer your champagne straight up, Marc recommends the Veuve Clicquot “Yellow Label”, Brut. In Marc’s words, this bottle is his go-to. “This bottle is a no-brainer. It’s priced reasonably, and I’ve never met a person who didn’t enjoy it.”

Brut Yellow Label has an intense fragrance with notes of fruit and brioche. It is incredibly well balanced, fresh, and fruity. It is a fantastic pairing for chicken or fish, and also works great as an apertif.

Another great sparkling option is a bottle of Prosecco. Prosecco has long been the main ingredient in the popular Bellini, but it is growing increasingly popular as a less expensive alternative to champagne. It is a very dry and sweet sparkling wine.

Marc recommends trying Prosecco di Valdobbiadene, Sorelle Bronca. This Italian Prosecco has delicate notes of pear, green papaya, melon rind, and peach. The acidity is just enough to keep your palate interested and ready for the subtle apple and jasmine notes on the finish.
